GREEN SOUP

INGREDIENTS

5 cup Frozen Peas
-½ Yellow Onion, roughly diced
-1 13.5 oz can of Coconut Milk (or regular milk)
-4 cup Vegetable Broth
-3 cloves Garlic, sliced
-
⅓ cup Fresh Parsley, chopped
-
Salt and Black Pepper- to taste

INSTRUCTIONS
1) First, add a splash of Vegetable Broth to a large pot. Add in the Onion and Garlic, then sauté over medium heat until translucent, that should be about 2-3 minutes.
2) Add Parsley to the pot, then sauté for one more minute. Add all of the remaining ingredients, and then cover the pot and bring to a boil over high heat. Once boiling, uncover and reduce the heat to low while you let the soup simmer for 8-10 minutes.
3) Transfer the soup to a blender (you can also use an immersion blender) and blend until you get a smooth and creamy texture. Transfer to bowls and serve them on the board for a better presentation
